What's spelt?! Spelt was an important staple in parts of Europe from the Bronze Age to medieval times. Spelt is an ancient grain that resembles wheat, but does not have the same high gluten content. Spelt has a tougher husk than wheat, which may protect the nutrients better. Spelt has a somewhat nuttier and slightly sweeter flavor than whole wheat, and contains more protein than wheat. Spelt protein is easier to digest than wheat protein, so many people can tolerate spelt products even if they are allergic to regular wheat products. Spelt has less calories, but more niacin and riboflavin than wheat. I like to add spelt to my diet as a break from wheat, plus it has unique nutrition that makes it a quality food!
Use spelt flour to replace whole wheat in your recipes, and i doubt you'll be able to tell a difference! Spelt can be sprouted to add to soups or salads. It can also be milled into flour and made into bread. Use my favorite bread recipe with this modification: knead the bread dough gently (by machine on the lowest setting) for just 5 minutes. The bread dough will feel like silly putty (sorry, that's the best description I can come up with!) Continue with the recipe and your end result will be delicious nutty tasting spelt bread. My family cannot really tell it apart from wheat bread!

view | Beans, Pinto, 25 lb bag Nutritious and filling, beans are a mainstay in any food storage program. I add beans whenever I can to salads, soups, casseroles, and more to add nutrition! They can also be ground in your grain mill to make "bean flour" that can be whisked into boiling water to make instant refried beans.
Here's the easy way I cook beans:
Rinse beans and put (any amount of beans) into a pressure cooker. Add water so it stands 3" above the beans in the pot. Put lid on and heat over high heat. When pressure cooker comes to pressure and the pressure cock starts "rocking" steadily, then reduce the heat to medium high (keep it high enough to make the pressure gauge at 15 or the pressure cock rocking) and put your timer on 35 minutes. When the timer rings, run the pan under cold water until the pressure is gone. Open the lid and serve.
You can cook beans on the stovetop by covering with water and boiling gently for up to 2 hours. Soaking overnight beforehand will reduce cooking time.

New technology makes pressure cooking absolutely safe and simple! You don't have to have special instructions or technique for cooking with a pressure cooker. It is so easy to use! Once you try it, you will be so amazed at how fast you can make dinner! You can use all your favorite recipes too.
Here's how:
Fill the pressure cooker just like you would if cooking without pressure, just adding the food and the same amount of liquid. Then put the lid on and put the pressure regulator on top. Turn on the stove and let the pressure build over high heat. When the pressure regulator begins to "rock" back and forth, turn the heat down just to the point that it keeps rocking (about medium high) and start timing:
Potatoes: 10 minutes
Yams: 8 minutes
Dry beans: 35 minutes
(Dry beans cost 1/4 of the price of canned beans)
When the timer rings, just put the pressure cooker under cold running water until the pressure drops. I just put mine in the sink and let the water run over it. When pressure has dropped to normal, then open the lid and serve. You will be amazed how this cuts cooking time off your busy schedule! You can make potatoes for dinner in about the same amount of time it takes to make up instant potatoes, but with much better flavor, freshness and nutrition!

The Swedish made Electrolux Mixer is the finest breadmixer on the market—I love mine! It is so sturdy that it seems indestructible! I have never had one smidgen of trouble with it in over a decade. This is a lifetime investment that will pay you back easily in 6 months of delicious home baked bread and baked goods that build health, save you money and keep all those preservatives and additives out of your diet. Use for small amounts, or large—you can whip out several loaves quickly as this incredible mixer makes 15 lbs. of dough that is smooth and elastic for the perfect bread texture. The Electrolux includes a unique "roller and scraper" (my favorite tool for bread making), a dough hook, plastic bowl and double beater whisks, along with the heavy-duty extra large stainless steel bowl. Look no further! This absolutely the best bread mixer available! I love the stainless steel bowl design which has a curved-in rim which keeps the contents inside the bowl. You will get a 3 year warranty, but you'll never need it, because this machine can't be stopped. Mine has never needed even one eensy repair in the 15 years that I've used it almost daily. It has just set right on my kitchen counter year after year being an amazingly dependable workhorse. I think it is impossible to break this durable, heavy-duty machine!
Money: When you consider a breadmixer, you have to think of it is as a lifetime investment. Otherwise, you'll end up buying (and replacing) lower price mixers that need repairs after a year. I've done that too many times to mention! This thing won't die, so you can count on it lasting through all your family-raising years! I did the math and decided that if I bake my own bread, rather than spending $3-$4 (or more) per loaf for the "good stuff", I'd have a savings of at least $15-20 per week just on bread. And my bread would have the freshest, most wholesome ingredients rather than whatever the grocery store bread has in its list of ingredients! Ingredients for making bread are relatively cheap, so even a conservative estimate would give me a savings of $60 per month, just for bread alone. And that is not counting the muffins, cookies, pizza dough, rolls, cakes, brownies, coffee cakes, mashed potatoes and everything else I make in mine. So, even at a low-ball figure of $60 per month savings on just bread alone, I paid for my mixer in just 6 months!
The Magic Mill Mixer comes with a very deep food-grade stainless steel bowl that holds up to 28 cups of flour (which makes 15 lbs. of dough!), a plastic bowl, beater, roller/scraper and dough hook. The bowl does not have a center cone to get in the way or any seams or shafts so clean-up is easy! Basically, I use the mixer with the stainless steel bowl and the roller/scraper to make fantastic bread, cookies, cakes, muffins, and everything else. The roller and scraper design mimics hand-kneading and the results are excellent, whether you are making 1 loaf or 6, like I do! The Magic Mill roller and scraper knead the dough without tearing it, unlike dough hooks, making the dough light and fluffy. After using the Magic Mill roller and scraper, you may never want to use a dough hook. I haven't.
One of the fabulous features is the auto-off timer which allows you to set a number of minutes (I do my bread for 9 minutes), and walk away. The mixer kneads the dough, and then automatically clicks off, whereupon it is left to rest and rise. It takes me 5-10 minutes to dump the ingredients in and then set the auto-off timer. When I come back in a half hour or so, there is perfectly risen dough, just ready to form into loaves!
Why is the Magic Mill Assistent so much better than the other bread-mixers? Why doesn't it need repair? Well, the design is amazing—an engineering masterpiece. And the efficient, high-torque direct drive motor with all stainless steel working parts has power to mix and knead even the largest batch of heavy bread dough, even bagels, without straining. It sits firmly on solid rubber feet, and will not walk on the countertop during use. Because of its superior motor design, the Magic Mill Assistent mixer only needs 600 watts of power to do what other mixers (rated up to 1400 watts) can do, without taxing its motor.
